I recommend the ISSPRO Ultimate Fuel Level senders and, if needed, their gauges and other products...

The pickup can be made with seamless, (extruded), copper tubing 3/4" mimimum diameter. If you have the original bronze manifold plates from your old tank, they can be fitted into your new tank and bronze fittings added as necessary. 1/2" for supply lines & 3/8" for returns.

Hope you're doing your layups in vinylester, NOT polyester. Make your baffles out of fiberglass also.
