Higher octane reduces detonation. Using a higher octane gas in an engine set up to run on lower octane doesn't cause any problems.but most likely doesn't cause any performance increase either.
Running lower octane gas in a motor designed for higher octane fuel causes pre-detonation or 'knock'. This can be addressed to a limited extent by retarding the timing a little. Performance will be less.
Some of the older motors in our boats were built to run on 100 octane or more. Nowadays the highest-test fuel is arond 95-96 octane. If you have an old motor you should be aware of this.
Also, when water gets to a point in the ethanol laced fuel, the ethanol comes out of the fuel along with the water all at once. When you draw off this water bottom, you take a bunch of ethanol with it. The fuel that remains has less ethanol in it, and therefor a lower octane than it had originally.
If your supplier, or you, have found water in the fuel and removed that water, beware....you removed some or all of the ethanol as well. You then will be running BAD GAS! It will have a lower octane, and that can lead to detonation, which can do really nasty things to your motor. The water issue with ethanol laced fuel is very different than it used to be when any water just passed through the gas, taking little or nothing out of the fuel along with the water when you drew it off.
