JohnD, if you have a thru hull with a faring block properly installed, you won't loose the bottom at any speed a 31 should be traveling. I have a 600W/1000W Airmar feeding a 1250 Raymarine and will hold a good reading from idle to 37 m.p.h. The only time I will loose the bottom is when in someones exhaust/wake. I did have to move the transducer further back, between the engines though. The other was forward near the sink area and did loose the bottom in rough seas. I don't notice a starboard pull from it, but I'm port heavy anyway.
