Question on first 31 purchase

I welcome your advice on the purchase of a 'project boat' vs one that is already been overhauled. I have never owned a boat the size/complexity of a 31' and have little extra time between a young family and career. I would enjoy 'learning my 31' by tearing her down and putting her back together, but am beginning to question that logic given my qualifiers above.

Taking a look at the listings on this site, I'm wondering which 31 would be the best fit. Thoughts?
