Kevin,
The start current is what you need to know in order to size the genset, besides your total loads.

If you don't have an AC current meter installed on the boat, borrow a clamp on Ac meter from someone and clamp around the black AC "hot" wire on your electric panel.
Watch as the ac unit is started and see what the peak start current is and consult with a generator manufacturer specs to see what it will handle.

I just got my Honda EU2000I genset and have not had a chance to put it thru its paces yet, but boy is it a slick unit.

I would not spend the money on updating the compressor. A good investment is a hard start kit which helps start the AC better and can keep the initial current draw down.

They can be had at any HVAC supply house.
