Your bulkheads look just like mine did. As I see it, you have two choices. You can use 3/4 starboard to make new bulkheads, (it is quite simple and that is what I did) or you can get some 5/8 inch marine plywood, cut the shape and then soak it with thinned epoxy. after letting it set, cover each side with a laminate using either epoxy or contact cement. I'd use a thin sheet of fiberglass on the outside and some sort of pattern of the thin formica that would sort of match the inside. Maybe just white. On the outside, if you used thin fiberglass, you could match the boat color using gel coat, or it you used a formica laminate, you could use a paint such as imron. You may even use a formica that is close to the color of the boat. Just be prepared to paint it some day as formica doesn't like years of weather. Just don't go over 3/4 inch or you won't be able to open your engine hatches. As I said, I used the starboard and for the most part, I am pleased with it, but when the bright sun hits the outside, it is somewhat transparent and you can see the mounting screws. The absolute white of the starboard on the exterior is brighter than the Bertram color and of curse, you just can't paint starboard. I know that there are different manufacturers of starboard and there may be one that isn't quite as tranparent. You can clean the aluminum window frames like you would any anodized aluminum or you could take the opportunity to put in a different set of window. I even made a new door that most of my friends say I did not make because it looks too good with it's slean exterior and functional portal.
