Something simple but very good--two good-sized racks of pork ribs, dusted pretty liberally both sides with cayenne pepper and Lawry's seasoned salt. Let them sit out like this for 20 or 30 minutes while the smoker is getting hot. That pulls some moisture from the ribs, setting the rub. Then into the smoker for 4 1/2 to 5 1/2 hours (according to total weight of the ribs). The seasoned salt has enough sugar in it to caramelize the surface of the ribs as they cook and you never have to baste or touch them again until done.
