Walters brining technique sounds great.Let hickory be the bulk of your smoking wood ,soaked in water to keep it from burning to quickly and to creat more smoke. The addition of a fruitwood such as apple ,peach or cherry in my opinion is a must for fish.Sometimes here in Georgia we will add a small piece of pecan(be careful it is strong) and in south Florida people use buttonwood.Just remember never add fresh charcoal to your smoldering fire ,have it ashing off in a separate fire then add to your smoking fire(it can be poisonous and you can ruin a batch of good fish real quickly)or better yet use the all natural wood charcoal, you can put it direcly on your fire.Yum,where's my mullet.
