Walters brining technique sounds great.Let hickory be the bulk of your smoking wood ,soaked in water to keep it from burning to quickly and to creat more smoke.The addition of a fruitwood such as apple ,peach or cherry in my opinion is a must for fish.Sometimes here in Georgia we will add a small piece of pecan(be careful it is strong) and in south Florida people use buttonwood.Just remember never add fresh charcoal to your smoldering fire ,have it ashing off in a separate fire then add to your smoking fire(it can be poisonous and you can ruin a batch of good fish real quickly)or better yet use the all natural wood charcoal, you can put it direcly on your fire.Yum,where's my mullet.
