how much is too much ?

Third set of wheels. Got a deal they are 21x27 three blades. I now have 20x20's on and know a lot of you are running 21's . My question- is 27 degrees of pitch too much ? Boat has 300hp diesels and was definately under propped with the 20x20's. Should I have some of the pitch taken out of these ?
