Grinding off gelcoat you better bet talented with a sander, otherwise you will have continuous dips and ripples which will be next to impossiable to fill and fare when re-gelcoating. We do not remove old gelcoat when painting boats, way to costly and really not needed with two part paints.
I painted LESLINS going on five years ago. In just the right light and up close you can see some post curing (shadows of the prior crazing) but the crazing does not come through. Post curring will happen with any product that uses a catalyst to cure.
