Fishmonger: I personally like your Y315's better than any other engine choice in B31 because of their size meaning you have access to everything on the engine plus a nice turn of speed.
30+ years ago I was along when 2 B31s owned by car dealers were trying to out-race each other by souping up the engines which were 440 Chryslers at the time. Both boats exceeded 40 knots and baot wakes were a problem at those speeds with regard to handling and stability of the hull. I never saw or felt the bow drop at those speeds though the wheels were 18 or 19" in diameter. I did experience hull instability and THIS is the reason to limit HP.
In the 1960's and 1970's the Bertram 31 was considered a very fast boat. There were few diesels that offered speeds over 17 knots and 31s blew right by them on the way to the fishing grounds in a time when fuel was very inexpensive. It is my opinion that this is the main reason many consider the Bertram 31 a speed hull. Hunt's success with Moppie as a racer in it's day only adds to this notion.
At less than a 27 knot cruise speed, the Bertram 31 offers great safety and stability in the open ocean making it a fantastic boat with a great deal of history behind it.
