The guys with the 270hp Cummins are running 28-30kts top end depending on who you talk to. The 330hp Cummins guys are running 31-34kts top end, again depending on who you talk to.
The 31 my partner and I have has the 330hp Cummins and tops out at 32.8kts. So the extra 120hp equals 3-4 kts as an average. So you get an extra 80hp by going to 370's the best you can look for is 2-3kts as a guess. You'll still be driving the bow down because of the 15 degree shafts.
If it were my money I'd go with 270's cruise at 26 kts. and not have the extra worries of heat exchanger maintenance, vessel performance, and added fuel/cost caused by the higher horsepower units.
The 270 guys out of Manasquan are running around 140 gallons to the far canyons. I run about 160 gallons with the 330's. Our short run is 76 miles our longer runs can be in excess of 120 one way.
I haven't heard of anyone gearing these things with anything but 1.5-1 gears with the Cummins. Perhaps 1-1 would minimize the transom lift caused from the "big wheels" and allow you to run smaller diameter blades. You could start a trend. "Good or bad" to be determined.
