Tough decisions.
If going gas, you can rebuild your existing trannies for right around $1k each for just about everything. I even have one in my garage with a fresh rebuild on it if you are interested.
The boat yard or you should be able to shave those beds down without major problems. You may even be able to use the existing saddles, just lower the beds a bit. Relative to my 350's, the mounts dropped something on the order of 2 inches (but thats a real,real rough guess).
Unless you have range issues, I would not even consider the conversion in light of what you are planning to install. The basic work is the same. I don't see much upside from doing all the work just to put in engines with a question mark.
Then again, I am biased. My money savings, do it on the cheap approach has cost me 8 months of fishing. The actual savings has been minor and the stress factor major.
