The original headliner was mearly thin skin ply or door skin material with heavy duty wall paper- yes wall paper on it.
If you are going to redo the headliner be sure to pull it all down first. You'll be amazed at the amount of water that has gotten through the bow rail and rub rail holes. If you deam your material re-useable go over it with a mix of Clorox and water at 50/50 to kill any and all mold in it. Odds are you will be amazed by the amount of funk above the skins. Ours have been out for 2 months and still reek of old Bertram.
On the CHIMERA the old V-Berth skins were not re-usable. We will replace them with Vinyl wrapped fiberglass skins (I like the vinyl because you can add 1/4" hard foam behind it and get the added benefit of noise reduction-the fiberglass skins will not retain moisture and the skins will be forever reusable). The problem with starboard and azec is the molecular instability (it shrinks and expands). If you decide to use these materials remember to over size the mounting holes and give the headliner some room to move-just like vinyl siding (there are several options including cover buttons to hide oversized holes).
