JC - missed one of your questions - the haze behind the boat at cruise. This is normal and I usually see it on calm days. It is just diesel exhaust, like the 18 wheelers leave down the road and is totally normal - now bellowing black smoke at cruise is not normal.
Tony Athens of Seaboard Marine in Oxnard, CA now carries a superior hi performance air filter for the 6BTA that is made by S&B, similar to a K&D, but a lot better made. Cost about $75 each, but are washable, permanent filters and a bargain vs. the stock Cummins paper filters. The S&B's will reduce the cruise smoke a good bit. I also installed the Algae-X magnetic fuel conditioners years ago and they help both smoke and fuel economy.
I'm running three blade nibral 21 x 22 props also thru ZF IRM 220A gears at 1.53:1.
Anyway, sounds like your are running fine, just do the WOT rpm test with a full load of fuel, beer drinking buddies, etc and make sure you reach the Holy Grail of 260-2650 rpm and if so, go fishing and kcik her up to 2400.
