Load/RPM's/Engine Life

Hi there. I am very new to diesel engines. I am trying to learn the most I can. We recently got a B31 with 250 6bta's . We have Hy-Torq 21x22 props.
I have a couple of questions...
I want the engines to last for some time...I believe the boat is very loaded most of the time as we have a full tower, normally carry 7 people, fishing gear, ice chests and 250 galons of diesel. I am concerned about overloading the engines....how can I tell???
The temperatures on the engines have always been at the desired temp and the oil pressure seems right.
I noticed that to get up on plane there is always black smoke but runs with only some white smoke thereafter. Last time I went fishing I notices we had left a trail of hazy smoke (makes sense??).
We have been operating the engines at 2,100-2,200 and at those RPMs we get 20-21 knots. As far as fuel consumption in am satysfied but wante to hear your comments..last trip we ran to 45 miles fished for 6 hours and then ran for 50 miles with generator on all day and burned 114 galons. Does that sound right???
What should my safe RPM ranges be on this boat and what is the key fot longevity on this engines??
