Harry - just use plain ole Formica like they use for counter tops. Use the smooth for interior. It is super easy to work with once you get the hang of it, one trick is to coat both surfaces with the contact cement, let it dry, then take some cheap poly rope, say 1/4", and "S" it on the plywood, then place the formica on top of the rope. Get it were you want it, then pull a little of the rope out at one end and press the two surfaces together and let it bond, then pull some more rope and go along till it's all bonded. Trim the edges with a router with a formica blade with the ball bearing on the bottom of the bit. One of the simple ways to dress up the B31. Formica takes paint real good too. Easy, cheap, and very effective and lasts a long time.
Now most of you know this, but for those new here, the best stuff to restore the dark wood grain formica Bertram used is a paint additive called Penetrol, available at any paint store. Just wipe it on with a rag, let it sit a few seconds, then wipe it off with a clean dry rag. Makes that old faded formica shine like new.
