Best material for bulkheads and cockpit subframe

Hey Guys,
Well I've finally started on "the Project". Had my mate repair some holes in the bottom of the B31 this weekend so now I'm committed to follow through to the bitter end-God help me! It's going to be a long haul so much support is needed!!!

I wonder if you knowledgeable fellows can help me? I am searching for the ideal material to make the aft engine box bulkheads and the joists and joist supports for the cockpit floor out of.
The material must be able to hold screws (and take load on them) as well as hold epoxy or polyester resins for tabbing etc.
The obvious choice is wood but I don't want to get into the labour of covering each peace with cloth and resin. I live here in Bermuda so choice is limited also.
I have access to what we call PVC board here. I am not sure if its what you call PVC foam board there. It comes in 8x4 foot sheets in varying thicknesses. It is white and rigid and smooth but the interior is quite ruff along a cut ege.
I'm not sure because it doesn't look like something that paint or resin would stick to and I'm not sure how well it holds screws. Perhaps it takes paint and resin after its scuffed with sandpaper.

For now advice on what to make the cockpit floor substructures out of would be appreciated.

For the next year or so it takes to restore this baby, I'm going to be relying on you guys alot, as I'll be doing most of the work myself.
