Formica Lamination

I have started to restore the interior of My 31 Express Cruiser. Never thought of laminating formica on plywood to get a hard smooth paintable surface until I read it here on Bertram 31.com but it makes perfectly good sense to me. My question is......is there a particular kind of Formica to use? color?? surface texture??? etc.
