Rob,
I fish mine and use it as a picnic boat. Most of the time I take my family down to a local island and spend the day on it. Mine is the open aft cabin model (Sportfish) not the Fly Bridge Cruiser. I do take it out by my self often just to run it. Like any other boat once you have a system it is not a problem. In reality the bridge is three steps off the engine deck so its not that big of a deal. There is nothing about this boat that would demand it be treated differently then any other boat. As you know going out by yourself is not the best option on any boat. I had a good friend who's Dad was lost in Lake Michigan this way. He went out fishing on one side of the Lake and his boat trolled ashore on the otherside with out him on board.
They never found him.Rewiring these things is not an issue ($500). I went to a load center with breakers in the cabin, waterproof switches on the bridge ($25/ea) and tinned copper wire with heat shrink connections and have not had an issue since. I do keep mine simple (eg no genset, portable head, no hot water) so there tends to be less to go wrong. Overall the systems on these boats are simple.
