Rob,
As Al indicated I would look at the riser install.
If you had no water problem before, replaced risers then had a water problem on first run, well the chance of it being something else is slim.
Wrong gasket or gaskets depending on fresh water or raw water cooling, no sealer, bolts bottoming out before tightening, rough mating surfaces.

Don't use the blue, no sealer Merc gaskets if applicable in your case. They suck.

The other thing I picked up from your post was the water temps.
140 or lower is too cold for proper combustion.
Raw water cooled is 145.
Freshwater cooled is 160.

Get that moisture out asap. Don't let it sit in the engine.
