Paolo,
Past discussions on this subject suggest that the 31 is so well designed that it runs at a near perfect attitude without trim tabs (assuming the original weight distribution has not been altered aft too much). My 31 had them when I bought it, and I see two advantages: ability to trim the boat when there is a port or stbd list underway (which Vic says can be accomplished by having the fat guy move to the other side of the boat); and lowering the bow (especially at lower speeds) in a head sea when you want to take the chop farther forward on your hull. I can't comment on the difference in speed or economy, but I agree with Vic that they are not a necessity as they would be on many other boats.
