Congrats and welcome aboard, really nice boat. I'm partial to the Lee Sr. outriggers because they are original and match the art deco look of the B31.
Electronics are so much better today, and the prices have come down a lot. My experience goes back to vacuum tubes and loran A, AM marine radio, etc, so I have seen a lot of changes.
For basic navigation and depth sounding, my view is that the Garmin 2010/3010 color unit is far and away the best chart plotter. I have some vision issues and the brighness of the Garmin is superior and the size of displayed numerical readings is huge. True daylight viewing under any condtion. I have the 'black box' depth sounder module for my 2010C with a 'shoot thru the hull' hockey puck transducer and it works perfectly up to about 250' at 24 kts, deeper at lower speeds. A thru hull will give 1000' easy I'm told. I highly recc the Garmin.
An autopilot is a must in my view. I've had the very inexpensive SiTex SP 70 for about 12 years and it has been trouble free.
Radios - Icom is far the best.
As for trolling valves, think long and hard before going that route since all it does is slip the clutch plates in the gears, increasing wear and leaving room for error, i.e. if you forget and gun it with them engaged you can ruin the gear. As an alternative consider changing the rudders out to Capt. Patrick's stainless oversize rudders that allow perfect single engine operation at any speed.
