Sorry for the questions, but it helps to focus on your options.
What's your power now?
How do you plan to use the boat?
Doing it yourself, all or part, or having yard do it?
Here's some general answers (I've got a gas B35 and thought much about this, but as long as they hold up, I'm not doning anything).
Diesel is preferred, 350-400hp, for good speed but 300 will do. Any less than 300 and you won't have the speed the hull likes to perform at. You could go with the 8.1L gas motors heard some good stuff, Crusader got the exhaust right Merc didn't at first but may have it by now. The gas will cost 60-70% of what diesel will and provide only 1/4 the resale value.
Make of diesel, generally cummins small motors are good, cheap and cheap parts. The reman option from cummins is a great cost effective way to go. The new electronic motors from Cummins and volvo are very attractive, but more $$.
Shafts: Generally you'll need 1.5 inch plus shafts for 300+ diesel, though I've heard of a B35 with 315 yanmars (I think) who's still running the 1-3/8 inch shafts.
Props: You should prop so you can reach over max rated rpm with a light load. Operate always at rated rpms or less.
I know of an 80's B35 with cummins 370hp mechanical motors & and the owner is very happy with the boat and performance. I don't know exact #'s but it cruises 25kts and max I think is 30kts. At 25kts, the B35 hull is very happy.
