I replaced my original cabin floor covering with white fiberglass non skid. I was manufacturing boats at the time, it was about a 1/8" thick, glued it down with epoxey and used stainless hatch trim from Taco(Miami). It really brightened up the interior, easpecially if you have the original brown Formica interior, I'm not a fan of lots of maintance, especially varnish work, I just use Soft Scrub, brush in and hose it off and it doesn't scratch or dent.There is another product called Plasteak(vinyl material) that looks just like teak cockpit sole,it's got a sandable surface just like regular teak boards. It's not cheap but looks like it would last and is repairable. Just an other alternative suggestion from someone who doesn't want to be a slave to maintance.
