Unless you are trying to shoe horn in 3208's or some really wacky set up, you will not have to give up any cockpit space with diesels. Any one that tells you that has been hanging out a bit too much with Whitney Houston and Bobby Brown.
Depending on where you want to run your boat speed wise 90% of the time, that will determine the power package you want.
If you genuinely feel like conditions will permit you to run @ or around 30 knots all the time, then the 315 yanmars (if you pick that brand) would be your package. If like me you know that conditions will not allow much more than 24-26 most of the time, then the 240's are perfect.
It is not like gas where you keep "reserve" power. Diesels like an rpm range from what I know, and have a power band completely unlike the gas.
Different engines, different animals...
