A bow pulpit is a handy way to store the anchor out of the way (unless your a stick boat) think of it as a clothes hanger for the anchor. On the "CHIMERA" we have a system using a windlass and no bow pulpit. We use the existing Bertram chock on the bow to guide the line up. When the chain comes to the chock we simply stop hauling back (a simple tape marker tells us when the chain is coming) at this point the anchor is hauled by hand and stored.
A pulpit on any boat tends to get in the way at one point or another (god forbid you hook the anchor while pulling away from or into anything).
You may also notice the big boat trend (up here in Jersey anyway) is to remove the pulpit, look at the Viking factory boats, and for the faithful the Bertram 63' which Marine Max showed in Brielle was done without a pulpit, the majority of custom boats have done away with pulpits as well. The reason is simple; it just looks better.
So your choice is easy just ask yourself how many times you plan on anchoring if its alot choose the function of a pulpit, if its a little go for the stylish look of no pulpit.Best of luck.
