With the ignition on, ground the sender wires at the engine. The coresponding gauge should read full scale.
This will tell you if you have the correct sender wires to the proper gauge.

Next you need to find the sender numbers and make sure they match the gauge not only in resistance value but also if they are single or dual station.
Make sure also if you have a 100 to 250 temp gauge as an example that the range on the sender matches it.

Check all the grounds and +12v wires for being tight and properly connected at the end.

Some electric gauges when turned off will not return to zero or the left but when power is applied they should, or in the case of a hot engine it should read temp.

Oil pressure sender wire should be blue, water temp tan. But I've seen just about any color used.
