Most serious fishing boats wouldn't have a platform let alone anything sticking out the back.
Trim tab plates are recessed under the hull so there is nothing to catch the line or fish on.There are some custom sportfish boats that do in excess of 35 knots and in all reality, when can you do that kind of speed without beating your boat and its passengers to death?
Ask Pat and I sometime about our last boat trip to Mexico. One of the fast sportfish boats leaving Key West behind us, torpedo'd a wave in rough water and peeled the deck off the hull, blew out the back bulkhead and it sank in minutes.
Surface drives stick out 4 to 5 feet with nothing but sharp edges.
What it boils down to is do you want to fish or do you want to go fast?
If you like to go fast, then buy a fuel sucking go fast boat.
