Bill,
I have had my bulkhead walls out of my 28b and reskinned them with white formica. If I were you, I would wait till hall out until I took it out. The process is not that bad. On the 28, you will need to remove the door frames(drill out the wood plugs on each side) and then remove the trim at the top of the bulkhead wall and also the side panels. There are screws at the bottom and top as well as a thru bolt or 2 that is accessed in the head and behind the dinette wall. The walls will come out, Bertram did use some pretty good caulking, have a putty knife to free up the wall behind the dinette and bath area. I believe this wall is 3/4" ply with formica on both sides. If you are looking for a bulletproof redo--resin coat the ply--especially the edges and then skin with formica(Capt Patrick recommends epoxy on the outside wall instead of contact cement). This set up should last 30 yrs more.
I am going to remove mine and build new walls with updated formica and install custom window like Buddy Boy this winter.
