I think your manifold temps. sound fine. The logs get hot, the risers/elbows should stay cool enough to touch and even hold your hand on.
I'd take another look at your timing. Maybe the marks on the harmonic balancer are out, or something, but advancing timing beyond specs. is generally a bad idea--pre-ignition, high temps, melted/blown pistons--that sort of thing. Make sure tdc is tdc on the balancer, and get a degree wheel/tape if you're still not sure...but I bet the marks are fine and its something else.
I'd want to get it where the boat ran right at idle at whatever the factory setting is supposed to be (usually somewhere around 8 degrees--but I don't know your motors), and that the timing is advancing.
If you just put a carb. on, have you set your idle air adjustments? She won't run well at low rpms or idle much if those are out.
Good luck--but I'd advise against running much or at all with the timing advanced much beyond factory specs.
