Ian is right. No modification needed to the engine box.
If I recall correctly you need to remove the exhaust manifold on one side of the V-6 to change spark plugs even if you had plenty of room. The good news is that taking the manifold off isn't hard at all. Just keeep a couple of gaskets around for when you need them.
I was able to perform all other maintenance including changing a starter motor, with a little patience and only popping out the rear bulkhead around the engine box. I ended up putting that bulkhead in with some machine screws with wing nuts on the back side so I could get it in and out in a matter of a minute or two.If you fit jump seats back there make sure they are also easy to pop in and out. I think you might find, however, that those jump seats would not be as useful as just fitting a nice cusion over the engine cover.
