Dave,
Guess the deck is finally done, I'm sure it looks great!Anyway, I will assume the shaft is not loose in the coupling so I won' go there. I generally prefer the split couplings which clamp onto the shaft and also have the set screw to hold the shaft in place. Back to the question, not really an issue as to how tight the bolt is as vibration can loosen it up especially if the bolt fit is loose, so what to do.
One - Dimple shaft to give bolt an area to grip and hold, also doesn't gall up shaft to allow easy removal.
Two- tighten with correct wrench pretty much as tight as you can. Now most of the couplings I sell have a dab of Loctite on them, the Blue one which adds resistance yet allows for easy removal. Unfortunely it doesn't stop rust so there goes the easy removal idea. But it doesn't loosen up.
Alternative ideas-
You can wire the bolt, many are drilled for this, or you can have it drilled (cheaper to buy one, McMaster)I like to use a grade 8 Hex Head Set Screw and load them up with never sieze, I have them longer as I can put a nut and lock washer on them.
