Removing 5200 bonded items *PIC*

I had installed my 1KW transducer too close to my stb prop and was getting some cavitation above 20 knots or whenever I tried to trim the drives (B26). I tried to be as careful as I could, but the surface was prepaired when I installed it and the 5200 took hold very well. I did not try to use anti-bond, but don't think it would have done any good considering the suface contact area. The area that still has the gel-coat I used a sharp hyde paint scraper and a small hammer to cut through the 5200. Once I got this far (here was my mistake) I decided to pry down and pulled the gel coat right off. Thus the back of the area.
I used West system and put three good coats over this area after I sanded it and cleaned it up with denatured alchohol. It was 90 degrees with 90% humidity. My batches were starting to thicken or kicking within 15 minutes and you could not leave a fingernail impression after three hours. Between coats one and two I had to sand because it hardened faster then I thought. Between coats two and three I applied the third while coat two was still pliable enough to leave fingernail impressions. I have it built up to the same thickness as the surrounding gel-coat.
Is three good coats of west system enough to sand and repaint? Should I do anything else before I reinstall my much smaller thru hull transducer?
