The good news is that polyester doesn't require a perfect mix. One drop of hardener will eventualally cure the whole thing, So you might have under mixed the hardener, but no matter what it will eventually harden.
You need to get the heat up for as long as it takes, don't cook everything with a blow torch attitude, just warm it up and keep it warm for a long time.
A factor that might be in play is that the hull in the shade was quite cool, so even though the air temp is up the mass the resin is in contact with is/was cold. Contrast this to smaller parts sitting in the sun and warming up, and then staying warm as the resin cures and it might be the answer to the mystery, but in any event it WILL cure.
