Mike,
I am partial to the Walters Split Coupings over just about anything, other then a tapered coupling. I also like to fit them to the shaft so they slide with little effort, yet never loose.For guys who do back down frequently we install keeper rings so a shaft sliding out of the coupling is not an option. The rings are like two half moons and go into a groove cut around the end of the shaft. The coupling slides up the shaft, the keeper keys go on and the coupling ( which gets a counterbore) gets slid back over the keys.
As far as the set screw goes, dimple as Capt Pat said and make tight with some Threadlock. I have also come to like using a longer bolt and using a nut to jam in place, easier to disassemble. I would avoid pinning the shaft.
