Dave,

Since the outboard areas aren't structural & are hidden by your side panels, you can fill the gap with just about anything water proof. No real need to glass it into the hull, 5200 will work fine...

Same goes for the transom gap, unless it's visiable. If so, that needs to be made up with fiberglass and cosmetically finished.
