Matt,
Epoxy and screws is the technique you want...
Gorilla Glue is the most over rated crap on the market. I've done a lot of testing with it and wouldn't have another bottle of it, or other brand of expanding polyurethane glue in the shop.
Prime your joints with un-thickened epoxy, very thin but complete coating. Wipe away any and all excess. After the epoxy hardens to the point it is just tacky, (several hours at the most), mix another batch & thicken it with cabosil, (fumated silica), and bond your strips.
Don't clamp your work too tightly and squeeze out all of your epoxy. Epoxy needs a tiny bit of thickness to get the best bond. I'd probably use masking tape rather than clamps.
After the epoxy has hardened over night, drill, counter sink, and set 1 1/2" #8 screws about every 6". Do this alternating 90° so that the mechanical attachment is equally distributed to each joining panel.
Bung your screw holes with the mahogany & epoxy, sand flush after the cure, and your off to the races.
You should also think about corner reinforcement on the inside of the structure. There's going to be a lot of racking and twisting on those joints once you're on the water...
