Will,

Extending the waterline area of the transom is do-able with an I/O setup, but I'm not sure that the expense would justify any advantages.

Longitudinal stability might be marginally better, but underway lateral stability would remain unchanged.

The weight addition of a standard mounted swim platform can be compensated for easily by adding the same weight to the bow, using lead sheeting in the bilge &/or anchor locker.
