The easiest fix is to cut 1/4" plywood to size and attach it over the old formica(top and bottom) using #6 stainless steel panhead sheet metal screws. If desired, you can cover the screw-heads with a strip of trim.
If you want a painted finish use cabinet grade birch plywood and paint it. If you want varnished teak, use teak veneer plywood. If you want varnished mahogany, use mahogany plywood. Bubinga? use Bubinga plywood...
This method is especially practical on bulkheads tabbed into the boat. To upgrade the removable panels on the sides of the interior, it's often easier to use the old panels as templates and cut new ones in the finish of your choice.
You can also get creative and use 'tongue & groove' hardwood, beadboard, etc.
How about raised panels? Very shippy!
