When I refurbed the side panels on my '79FBC, I installed Tempress 15" X 33" watertight hatches in place of the openings in the panels. I did remove the fiberglass house insulation (soggy and tattered) and replaced it with 3/8" closed cell foam against the hull and over the deck edge behind the panel.
The foam source was ground pads for sleeping bags from a camping store. It'll act as soundproofing but, more important, it pads the hull and lets me store gallon containers for coolant, diesel conditioner, etc. without worry of wear-through and leaks from rubbing on exposed edges. The foam won't absorb water and rot and can be laid in place without adhesive. If I want to remove it someday, it comes out easily.
