Hatch Cletes

I'm finishing up making the salon sole/hatches for my B31. I've made the sole out of 3/4" teak & Holly veneer marine ply, and its basicaly made so that the whole thing comes up in three pieces.

Question is this: I'm assuming that I'll need to attach cletes to the bottom of the ply sole/hatches to keep them from warping. Does it matter what I make the cletes out of (ply, mahogany, oak), and should the cletes be screwed to the bottom of the sole/hatches, or epoxied, or does it matter? Thanks--with the time, effort, and expense that's gone into making the sole, I really don't want it to all warp when its done.
