Figuring you usually run your fuel down to 1/4 tank or so, and then fill up completely,I would opt for 1 tank. I feel it is simpler, fewer hoses, fittings etc to deal with. However in your case you could take advantage of load balance fore and aft if you had 2 tanks. Tuff call, both have their +-.
