B20 one tank or two?

I need some opinions on the fuel tanks for my B20 rebuild. I am setting this boat up for long range fly fishing and Bahamas runs from Stuart, Fl. My question is this. Is it better to have two 60 gal tanks or one 120 gal tank. Any and all ideas would be helpful
