Contact Rupp @772-286-5300. They can provide you with all the mounting options. If the riggers are 5' past the transom it sounds like the correct mounting angle wasn't achieved. The riggers should be even or just behind the transom. 30' riggers on a 35' boat are not too big, if they are installed correctly. I run 28' Rupps on my 31 Bert and have never had a problem. I have had Tournament versions of Lee, Rupp and Schaefer. I think the Schaefer are the strongest and really like the lock on the layout arm, prevents them from jumping in rough beaming seas. I think Lee's are the best for the $$$. Rupps are just plain too expensive, but I found a pair of 3 year olds for $1700.00. Couldn't pass that up since I was looking at $4400.00 for new Rupps.
