I am redoing some teak on Windstar this spring. I am following Capt. Pat's recommendations to the letter with excellent results so far. While it is true that teak needs to breath, I see no reason why you can't undercoat the exposed pieces and then varnish over. What I did so far was to sand off all the old epoxy and varnish down to bare teak with 60 grit. Then went over again with 150. In between sandings I clean down with a rag with denatured alcohol. I then layed down a coat of thinned epoxy....(using west system, thinned mixture with 10% denatured alcohol). Then I sanded again with 150 grit and applied a second coat of thinned epoxy (same ratios). Next I sand again with 150 and then lay down 2 coats of epoxy(unthinned) sanding with 220 between coats and then go to 3 or 4 coats of epihanes. Once on the varnish I will use even finer grit on the sandpaper. Capt. Pat recommended that applications of the varnish can be made while the previous coat is tacky but dry to the touch so as to eliminate sanding between coats.
