If I'm not mistaken, wouldn't a pair of outboards big enough to move a 31 run close to 30k anyway? Plus the expense of the bracket and any reinforcement to the transom? Removing the engine boxes to make for a flat deck( I would assume)? As much as I would love to go from gas to diesel, I think you should rethink this course of action.
