B20 Fuel Tanks

I realize I'm a little out of my league here with all you 31 footers out there but there isn't a "Bertram20.com" website... yet, to get any answers from experts on that model. Long story short: I have recently aquired a 1964 B20 Moppie. She has a 1995 straight 6 cyl Chevy mated to a 1998 Merc Alpha 1 drive. Batteries are under forward hatch. I just put her in the water today for the first time and discovered she is laying a tad low in the stern. I don't believe this is a "water intake" problem as the bilge didn't drain much on pulling her out. I'm not so familiar with this model as to know what her original fuel tank configuration was but she currently has 2 stern tanks (port/stbd) of about 10-15 gallons each (both full) and a center tank of approx 60 gallons (currently empty). Is this the original config for this boat? If not, it explains everything. If so, then I'm wondering why she would be lying this way. I'm assuming that filling the center tank would only make the whole boat lay deeper. Any answers/info/ideas, no matter how stupid they may make me look would be appreciated.
