Need help w/cockpit side panel material

I have removed the cockpit side panels off of Shambala and will remove the transom panel this weekend. They are finally at the point where they just have just deteriorated enough that they are impossible to keep looking clean and nice. The side panels are 1/8" thick. After taking one of the side panels around to four different places (lumber wholesaler, cabinet place, & two plastic/laminate places), I was told the material is melamine mounted on some type of substrate.
The direction I'm being advised to go on the replacement is a material that is phonetically pronounced pie-rite (I've never seen the name written). I'm told it is a material used in shower surrounds and is a plastic laminate that is impervious to moisture. My biggest concern is whether it will turn yellow when exposed to the sun. No one I've talked to seems to know what UV exposure will do as areas exposed to sun are not the common use for this material.
Anyway, I would really appreciate any feedback on this material or any other recommendations. I'm really only looking at this as a medium term solution since I expect to replace the cockpit and side panels with either the Glasstech or Bertram deck and panels at the time I repower (which with any luck will be within the next 18-24 months).
Any help on this would be greatly appreciated.
