Mike - have done some more looking on the net, and they are now throw-away cheap, Coleman, Igloo, make them. Even found an article by a lady that explains (sort of, would take the Prof to understand) how they work. I'll try to post up the link below, wish I knew how to cut & paste links, but over my old head.

Seems the Coleman and Igloo 40 qt. ones are only about 50 bucks. Anyway, an alternative to soggy boudin rouge.
